Soft fried egg on veggies

Start Your Day Right with This Egg and Fried Veggie Recipe

Breakfast, the most important meal of the day, so they say… Here’s an idea for a delicious breakfast which was made using the ingredients found in one of our Farm Boxes from the other week! This can be adapted with your favourite veggies and quantities depend on how many you are cooking for.

 Ingredients:

  • Potato
  • Onion
  • Baby Marrow
  • Tomato
  • Mushrooms
  • Kale/Spinach
  • Egg
  • Salt
  • Cayenne Pepper
  • Oregano

 

  1. Start off by cutting the potato into cubes and frying until soft and starting to crisp, add a sprinkle of salt.

  2. Dice the onions, chop the mushrooms and add to the pan and fry for about 3 - 5 mins

  3. Add chopped tomatoes and baby marrow and allow to fry for about 5 mins, stir occasionally, add cayenne pepper and oregano

  4. Chop the kale or spinach leaves and add to the pan until wilted

  5. Move all the veggies to one side of the pan to create room for the egg, crack an egg or two and fry until soft, or however you like your eggs.

  6. Scoop the veggies out onto a plate and lay the fried egg on top.

  7. To add an extra dimension, serve with lemon mashed avo and a dash of sour cream. - Enjoy!
